" Yohei has probably the best tasting neta (ingredients in Japanese) and best quality sushi in Hawaii. It stays true to the conventional concept and ideas of sushi. However, Sansei is far from it. I realize that Sansei's concept is Japanese with a pacific rim flair. As with anything in life, one must have a firm grip on the basics -- in order to become a skillful racecar driver, a person must first become accustomed to driving a regular street car on a normal highway. On many occasions, the shari (sushi rice) lacked flavor. For sushi, this is a bare minimum to reach in terms of quality. True sushi chefs in Japan take up to five years before actually reaching the level of making the rice into a ball (most of them must make sushi rice and prepare the ingredients). My comments may sound harsh, but I have eaten at all the other Japanese restaurants in Hawaii, and I have dined in Japan as well. " | |

"Sasabune is still going strong. Their sushi quality is absolutely top notch. Their motto is 'trust me'. They have a sushimenu but they prefer if you'll stick to their choices. And you should. The waiter (or the if you'll sit at the bar the chef) delivers sushi piece by piece as long as you want. So it is akind of Omakase but sushi only. Review: | " This restaurant has been around for quite awhile. It is quite famous, and the wall of celebrities´ photographs at the entrance reflects its reputation. However, for someone who has worked in restaurants in Japan, as well as in Hawaii, this restaurant has lost a lot of its quality. Of course, for someone who frequents the restaurant, I might sound ridiculous. The restaurant is crowded daily, and requires parking staff to organize the numerous cars in its lot. However, there are not many places one can eat quality Japanese food in Hawaii. Many of the establishments have become lacking in quality; riding on the fact that there are only a few Japanese restaurants (and because they have already become filthy rich). I have dined at Yanagi, and have eaten most of the items on the menu. The sashimi at Yanagi is low-quality; meaning the Maguro gives a strange aftertaste. Their attempt to serve exotic items such as yaki-uni is fruitless. I am sure it is not a popular menu item, because adequate quality and attention is not paid to it. It smells like uni that since passed sushi-servable condition. The menu is very extensive, yet should be somewhat downsized to focus on the more popular items. The quality of the popular items should be raised, and the less-popular items omitted. Why offer 200 mediocre to less-than-mediocre items, when you can offer 120 good items? " |
